Custom Resource Pack for Server

is there a way to make a cutom resource pack for a server? i want to make it for a specific item so is there a way to view the nbt of that item and find the item_model, and in my resource pack change the item model to be something I want?
the only problem is I don't know how to view the item_model or custom model data of an item
