Where to find complete changelogs for data packs?

There's some on minecraft.wiki and datapack.wiki, but when trying to make my data pack work in multiple version, I encounter a lot of small changes that were not documented on those pages.
So I'm looking for a place that shows every single change and not only the "most important".
Also, what is the best way to test if the data pack will be compatible with multiple versions?
At the moment, I have multiple instances on Prism Launcher and I go one by one.
