Allow all players to input data into a dialog and use the result

I am trying to make it so that any player (even without op) can have their info used. I am aware that you can use /trigger to store this info but that doesent work for strings of letters.
Is there any workarounds for this? Not against having to use a plugin or serverside mod if needed
