Custom Dimension Confusion

So I used to mess around briefly with custom dimensions but so much has changed and I don't even know where to start, does anyone have a tutorial? I prefer videos to web articles... I wanna start with a simple dimension and a couple custom biomes but want the noise to be default for now with the ability to change later, frankly idek what each noise setting does. (1.21.7) is my version desire
