Villager with custom Offers : instantly closes on interact

Hi! I have a villager that I configured with custom offers.
Up to 1.21.1, everything worked perfectly, but now (1.21.4), the UI just instantly closes after opening / interacting with the villager.
Any idea about why?
What's the proper way to customise villager Offers in 1.21.4?
Also, it looks like I can't customise villager profession via nbt
