Can you tag items in minecraft 1.21. if yes how?

I am working on making some custom items for a server i work on and i have official hit 1 week of making data packs, and after my failed attempts at making a money system i want to make somthing i kind of understand, 3d modeling in minecraft but i dont seem to be able to figure out how to give items custom tags
