is it possible to add the lashing potato to newer versions with a datapack?

long story short I want to make a datapack that adds the lashing potato with a different texture and recipe. I thought that since the bundle datapack kinda adds an item from an older version to be usable in newer one it could be done, but I've never done a datapack before and I am not sure how hard or time consuming it could be to make one. I'm being too careful around tutorials bc I'm aware that 1,20,5 chanegd nbts as a whole and I don't want to follow a tutorial that uses them since I want to use it on newer versions too. Any tips about how to take the code from that version is welcome.
