Override all villager data

Heya, when I have a custom villager spawn egg with NoAI:1b, the egg can specify custom biome/profession/trades/etc freely, and they stay when I spawn the villager. However, if the egg doesn't spawn the villager with NoAI, it will change back to the default the next tick. 
Is there anyway to have a custom villager spawn egg with NoAI:false, but still be able for it to have permanent custom data (including recipes and level?)
