Java custom entity

Infos:
Minecraft version: 1.20.2

Hey ! I've been searching for a way to add/create custom mob for my minecraft world. I've heard there is some blockbench plugins that could help me with that but I'm not sure which I should take. I don't wanna use optifine or any mod and I dunno if that is possible.
Any suggestions ?
